Spinach, Sun-Dried Tomato & Thyme Waffles — Recipe

Nothing says “good food, good mood” like a stellar meal to start off the day! While waffles are usually known for their sweeter connotation, Marleen Visser has put together this nutritionally sound savoury waffle alternative. This recipe offers a decent amount of protein, vegetables & flavour that packs a punch — to get you merrily through a productive morning.

Savoury Waffles:
Spinach, Sun-Dried Tomato & Thyme

~ serves 4 (8 waffles) ~

Ingredients:

  • 200g / 1 2⁄3 cup flour, sieved
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • pinch of sea salt
  • 1 tsp. lemon zest
  • 1 Tbsp. lemon juice
  • 300ml / 1 1/4 cup water
  • 40 g / 34 cup sun-dried tomatoes, cut in strips + extra to serve  
  • 1 1⁄2 Tbsp. fresh thyme + extra to serve
  • 175 g / 34 cup spinach, cooked and squeezed dry, divided in 100g & 75g
  • 2 avocados
  • 4 eggs

Optional: sumac

Directions:

  1. Mix the flour, baking powder, baking soda, salt, lemon zest, lemon juice and water in a bowl.
  2. Mix in the sun-dried tomatoes, thyme and 100g of spinach. Mix well.
  3. Bake the waffles according the instructions of your waffle maker.
  4. Bring a deep pan with water and a dash of vinegar almost to a boil.
  5. Break two eggs above a small bowl. Stir the pan to make a vortex and pour in the eggs. Leave them for 3 minutes, all this time almost to a boil.
  6. Remove the eggs with a small sieve and drain on a paper towel. Repeat for the other two eggs.
  7. Serve with some extra sun-dried tomatoes, the rest of the spinach, half of an avocado, a poached egg & sumac (per serving). Salt & pepper to taste.
