Quick Kitchen: Rocket Popsicles

Ingredients:

  • 150 g forest fruit, like blueberries, blackberries and raspberries
  • 1 tbsp honey
  • 150 g pineapple (a little bit less then ¼ of a pineapple)
  • 2 tpsp water
  • Juice of 2-3 oranges (± 150 ml)

You will need:

  • A food processor
  • A bowl
  • 6 popsicle rocket shapes (of course you can use different shapes as well)
  • Wooden sticks if your popsicle maker doesn’t have one.

Make it!

  1. Puree the berries in the food processor and mix the honey with the fruit. Put the mixture into a bowl and clean the food processor.
  2. Puree the pineapple in the food processor and mix it with 2 tbsp water.
  3. Fill the popsicle shapes for 1/3rd with the pureed berry mixture and freeze it in the freezer for 1 hour.
  4. Fill the popsicle shapes up to 1/3rd orange juice, stick the wooden sticks in them, and put them in the freezer for another hour.
  5. Take the shapes out of the freezer again and add the pineapple. Put back in the freezer and leave them for 6 hours or until the popsicles are completely frozen.

Tip 1: Go crazy and try different types of fruit. For example, replace the forest fruits with strawberries and the orange juice with mangopuree.

Tip 2: For a quick popsicle, replace the pureed forest fruits with 150 milliliter of forest fruit juice and the pureed pineapple with 150 ml pineapple juice!
