Sometimes you need a snack that is seriously satisfying. A couple of bites that will keep you full and nourished, even through an afternoon spent outside in the crisp November air. These muesli bars will do the trick (or treat), while being extremely delicious to boot! Thanks to Marleen from the blog Share Love Not Secrets for another wonderful recipe.
Necessities
+/- 14 x 20 cm baking pan or other mold parchment paper.
Instructions 1. Toast the oatmeal, almonds and walnuts in the the oven (150 C – 15 minutes / stir now and then) or in a dry fryingpan till the ingredients are lightly coloured. 2. Add the medjool dates to the kitchenmachine and chop until the dates become a soft mixture. 3. Add the honey and almond butter to a small sauce pan. Let the mixture melt on low heat (don’t bring to boil). Combine well and take from the stove once it’s all mixed and melted. 4. Combine the oatmeal, nuts, dates and honey almond butter-mixture in a bowl and mix everything well. 5. Put some parchment paper in the baking pan and pour the mixture in the pan. Use a dough roller or glass to press the mixture really firm into the form. 6. Refrigerate for about an hour or longer. 7. Cut in 8 slices. 8. Melt the chocolate au bain marie and dip the top of the bars in the chocolate. Let the bars dry for a few minutes and sprinkle with sea salt, right before the chocolate is solidified. This way the salt will stick to the bars and is still visible.
