Easy Vegan Stir-fry Noodles — Recipe

This vegan stir-fry noodle dish will become one of your favourite recipes for a lazy weekday. You know the kind of recipes that you make over and over again because it’s just so delicious and easy to prepare – and you make it until you’re bored of it? Yeah, this is definitely one of those!

Let me tell you something: as much as I love cooking, I don’t necessarily love to spend endless hours in the kitchen. Unless I’m planning to host something at my place, this just won’t happen. And on weekdays, we all want the same thing: meals that will be ready in no-time that are still delicious & will allow us to enjoy our evening before bedtime.

I remember last winter, being too lazy during the week to bother cooking, so I would order take-out – A LOT – and it got kinda depressing. This year I’ve managed to cook every single night, and it’s got me feeling very proud and inspired. I used to mainly order Asian food in, so I’ve been trying to mimic some of my favourite dishes – curry, tan tan ramen, stir-fried rice & noodles, etc. And I have to say: making them yourself isn’t always as easy, but it’s definitely more rewarding! I haven’t ordered take-out for almost a year and that feels great.

For this vegan stir-fry recipe, feel free to add any extra veggies or to swap for anything else you might have in the fridge. I like to add broccoli, snap peas and carrots when I have some. Bon appétit!

Easy Stir-fry Noodles (Vegan)

Ingredients
  

  • 1 tbsp sesame oil
  • 1 garlic clove pressed
  • 1 tbsp sesame
  • 1 chili finely chopped
  • 1 thumb ginger finely chopped
  • 1 onion roughly chopped
  • 1 big pepper chopped
  • 1 pack baked tofu
  • 2 servings noodles your choice
  • ¼ cup soy sauce
  • 3 tbsp rice vinegar
  • 1 tsp maple syrup to taste
  • 1 tbsp hot sauce to taste
  • black pepper
  • sesame seeds
  • 2 scallions to serve

Method
 

  1. Prepare the sauce by mixing soy sauce, maple syrup, rice vinegar and hot sauce. Set aside.
  2. Add water & salt to a pan and bring to a boil.
  3. Add the sesame oil to a pan. Once hot, add garlic, chili, sesame seeds & ginger. Cook on medium heat for a couple minutes until sesame is golden.
  4. Add the tofu to the pan, add lots of pepper and cook for a couple of minutes until tofu starts to brown.
  5. Add pepper and onion and cook for about 4 minutes, then add some of the sauce and cook for a bit longer until tofu starts to soak the sauce.
  6. In the meantime, add your noodles to boiling water and cook according to package instructions.
  7. When the noodles are done, drain & add them to the saucepan along the tofu and veggies. Mix well.
  8. Add the rest of the sauce and cook for a couple of minutes, until all the noodles are well coated with sauce.
  9. Divide between two plates & serve immediately.
  10. Serve with extra sesame seeds; add fresh scallions. Top with soy sauce & hot sauce, if desired. And enjoy!
