- Prepare the sauce by mixing soy sauce, maple syrup, rice vinegar and hot sauce. Set aside. 
- Add water & salt to a pan and bring to a boil. 
- Add the sesame oil to a pan. Once hot, add garlic, chili, sesame seeds & ginger. Cook on medium heat for a couple minutes until sesame is golden. 
- Add the tofu to the pan, add lots of pepper and cook for a couple of minutes until tofu starts to brown. 
- Add pepper and onion and cook for about 4 minutes, then add some of the sauce and cook for a bit longer until tofu starts to soak the sauce. 
- In the meantime, add your noodles to boiling water and cook according to package instructions. 
- When the noodles are done, drain & add them to the saucepan along the tofu and veggies. Mix well. 
- Add the rest of the sauce and cook for a couple of minutes, until all the noodles are well coated with sauce. 
- Divide between two plates & serve immediately. 
- Serve with extra sesame seeds; add fresh scallions. Top with soy sauce & hot sauce, if desired. And enjoy!
