The idea of meal prepping salads in mason jars has been trending this spring and it’s the perfect idea for something colorful, convenient and healthy.
For 4 small or 2 large salads. This recipes is based on 4 small salads.
Yogurt mint dressing: 5 tbsp. Greek yogurt 1 tbsp. honey 10 mint leaves, finely chopped 1 tbsp. olive oil 1-1.5 tbsp. lime juice, to taste pinch of salt & pepper, to taste
Salad: 1 cucumber, sliced 2 avocado’s, halved and sliced 4 beetroots, diced 120 g. goat cheese, crumbled 100 g. baby spinach handful blue berries and blackberries handful of almonds, roughly chopped
Materials 4 x 1/2 l. jar
Mix the Greek yogurt, honey, mint leaves, olive oil, lime juice, salt and pepper. Start filling the jars with 2 tbsp of yogurt mint dressing per jar. Layer the following ingredients per jar: 1/4 cucumber, 1/2 avocado, 1 beetroot, 30 g. goat cheese, 25 gr. baby spinach. Top with berries and almonds.
