I changed my diet a few years ago and part of it was that I stopped drinking milk. As the number of people suffering from lactose intolerance is increasing I found that freshly made nut milk truly is a wonderful nondairy milk substitute. Nuts are a great source of essential fats, vitamins, minerals and fibre. I personally love almond milk – there is no better way to start the day! It’s not only delicious but almonds are also the only nut to alkalize the blood.
Here’s how to make fresh almond milk. You will need:
Remember to soak the nuts for at least 8 hours (best overnight) and to wash them thoroughly afterwards. They contain high amounts of enzyme inhibitors which can strain our digestion. Soaking will break or neutralize the enzyme inhibitors and allow your body to absorb all those precious nutrients and make digestion easier.
Place ingredients in a high speed blender (I use Vitamix) and blend until the mixture becomes very smooth. Pour through a nut milk bag or cheesecloth. The cloth will retain the pulp and the liquid will go through. Keep refrigerated. The pulp may be used for cookies or other delicious treats. More on that soon.
Feel free to add vanilla, spices such as cinnamon and cardamon for example, agave or honey, dates, bananas or what ever your heart desires. The nut milk recipe is very diverse, try it out.
