Healthy Eats: Delicious Avocado Mac ’n’ Cheese

Mac ’n’ cheese is one of my all time favourite comfort foods. It reminds me of being a child and also of my broke college days. Honestly, nothing quite hits the spot like cheesy pasta. Seeing as we are in the midst a long Berlin winter, we’ll need all the comfort we can find. I recently made the yummiest—and healthiest—mac ’n’ cheese of my life. Adding avocado is always the right the decision, and that applies here too. For a healthy alternative to traditional mac’n’cheese that you can binge on without feeling guilty, try out this flavorful avocado baked mac.

Ingredients:

250ml of greek yogurt or normal plain yogurt
2 small avocados (or one big one)
60 grams of cheddar cheese
50 grams of parmesan
170grams of uncooked Macaroni
Jalapeños, which are optional but recommended 🙂

1. As always with baking, preheat your oven to 190 degrees celsius. In a bowl, mix together 250 ml of greek yogurt (any plain yogurt also works fine), two mashed up avocados (or one big one), and 60 grams of shredded cheddar cheese. The yogurt works here to add protein and also to substitute for the heavy cream normally used in baked mac.

2. Crack some black pepper and sprinkle a pinch of salt into the mixture. Now, in my dish I added about 100 grams of diced jalapeño, but I am a spice nut and I know not everyone likes there food as spicy as me, so that step is very optional (but it does add a great tangy flavour).

3. Next add 170 grams (when dry) of cooked elbow macaroni to the mixture and mix it well, making sure all of the macaroni is entirely covered.

4. Transfer the whole thing to a baking dish and top it off with some shredded parmesan.

5. Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the aluminum foil and let it bake for another 15 minutes until the cheese on top has a nice golden tone.

Now you’re done! Serve this dish with a small green salad at your next winter dinner party or simply make some for yourself for a cozy night in. I believe this dish is best enjoyed cuddled up with a blanket watching your favourite winter movie. I promise, this one’ll go in the family recipe book.
